Tajine
The exotic, aromatic flavours of the middle east are becoming a hot favourite for warming, comfort meals during the Australian winter.
The traditional Moroccan dish – Tajine – is a flavoursome, slow-cooked dish with tender, falling-off-the-bone meat, a colourful array of vegetables and an exotic mix of spices. There are many tajine recipes - some purely vegetarian, some with fish or lamb, beef or chicken, some including dried or preserved fruits such as apricots and lemons – but all extremely tasty and very healthy.
Tajine is also the name of the traditional glazed clay pot that the eponymous meal is cooked in. It comprises a flat, circular bottom with low sides and a large cone or dome-shaped cover that fits on top. This dome is central to the beautiful flavours for which the tajine is famous – it retains the steam and hence the natural flavours and aromas of the food and spices as they slowly cook in the dish below. Traditionally a tajine was placed on a brazier of hot coals for several hours.
